THE TERROIR

Omnis means 'All'.
This wine represents the holographic image of Samos
.
Unlike the single-vineyard bottlings, this is a masterful symphony of three distinct terroirs.

It unites the high-altitude freshness of Ambelos (980m), the warm depth of Crystalline Gneiss
at Pyrgos (400m), and the smoky energy of the volcanic ravine.

It is not just a wine from one place; it is the island's balanced taste in a single glass.

THE VINIFICATION

To weave these disparate elements into a coherent whole, we employ a dual vinification approach.
Part of the blend remains in the concrete egg tank to preserve the electric, floral purity of the Muscat. The rest is aged in Clay Amphorae, allowing the wine to breathe through the vessel's pores.

This adds texture, volume, and earthy complexity. The result is
a perfect equilibrium: floral intensity meeting a saline, mineral backbone.

Chef’s Pairing

A wine of contradictions needs complex flavours. Perfect with Stuffed Calamari with feta and herbs, Roast Chicken with lemon potatoes, or traditional Gemista.

The Alchemy: It bridges the gap between fresh

and savoury. The concrete egg tank retains enough acidity to cut through the dish's fat, while the amphora-aged portion mirrors the earthy herbs like oregano& thyme and the umami

of roasted vegetables. A gastronomic chameleon.
