THE TERROIR
The vineyard is defined by its limestone dominance, which provides a "vertical" structure and elegant acidity to the wine.
Situated in the same premium plot as Oriens, showcasing how a single terroir can yield diverse expressions through different winemaking philosophies.
Augustus stands as a definitive expression of Philia Winery, embodying a refined winemaking philosophy where the technical precision of meticulous viticulture and the purity of the 'Méthode Beaujolaise' on limestone soil meet the timeless heritage of Samos.

THE VINIFICATION
Immediately after harvest, the whole clusters are placed in our concrete eggs, where they undergo carbonic maceration for one week. This initial phase is crucial for developing the vibrant, explosive aromatic profile that defines Augustus.
After one week, the grapes are de-stemmed and gently pressed. The must is then divided equally (50/50) to continue its journey:
Concrete Eggs: To preserve the purity of the fruit and the "vertical" mineral tension of the limestone soil.
Oak Barrels: To build structure, texture, and a silky mouthfeel.
The Final Blend Once the fermentation and maturation are complete, the two components are blended.
This 50/50 synergy creates a wine that is both technically precise and philosophically complete—a signature expression of Philia Winery’s innovative approach to Samian tradition

The Augustus is a wine defined by its vibrant purity of the "Méthode Beaujolaise". Its silky tannins and vertical acidity make it a rare red wine that can elevate delicate, high-acid, and umami-rich seafood dishes.
The Dashi and Caviar create a deep umami base that resonates with the wine's mineral tension and the subtle complexity gained from its maturation in concrete eggs and oak.
The exotic acidity of the Tamarind finds its match in the vibrant, fresh fruit profile of the whole-cluster fermentation, ensuring neither the dish nor the wine overpowers the other.
